Flavoursome meals on a budget

You don’t have to splash out on expensive ingredients to cook up a delicious dinner. By making some clever swaps and using tasty stocks and sauces, you can make meals that are both tasty and economical.

Some of the biggest savings you can make at the supermarket are at the meat counter – by choosing cheaper cuts and bulking out meat-based recipes with inexpensive beans and peas, you can make sure your wallet doesn’t feel the sting when you get to the till.

Cheaper cuts like pork belly, brisket (beef breast), chuck (beef shoulder), mutton and shoulder of lamb all make an excellent casserole or stew. For a delicious mutton stew, slow cook the mutton together with some vegetables, cinnamon, sultanas and Knorr lamb stock. And for an even cheaper and healthier meal, try replacing half the mutton with chickpeas.

Chickpeas, as well as other peas and beans, are cheapest when bought dried – but, unlike pre-soaked tinned varieties, they’ll need to be soaked overnight and then cooked in boiling water. Other beans to try include kidney beans in chilli con carne, pinto beans in soup and black beans in stir fry.

If you’re making a risotto, try using cheaper pudding rice in place of arborio. Just make sure the rice soaks up a good quality stock, such as Knorr Simply Stock – available in chicken, beef and vegetable varieties.

Savour and save

When it comes to fresh produce, flexibility is the key, and clever swaps can save you money on luxury fresh items. For instance, replace expensive rocket leaves with round lettuce and thinly sliced radish for a cheaper salad with a peppery kick.

Another great idea: pureed peas mixed with crème fraiche, garlic and chilli make a cheap and healthy alternative to avocado-based guacamole.

Local, seasonal fruit and vegetables are usually fresher and cheaper than imported foods. Go to your local market for some real bargains, or plan your meals around what the supermarkets have on special offer – and remember that Knorr is a great way to spice up any meal.
